Maitake mushrooms (Grifola frondosa), also known as Hens-of-the-woods (舞茸 "dancing mushroom") in Japanese, is a polypore edible mushroom that grows at the base of old-growth oaks or maple trees. Other Common Names: Huishu hua, King of Mushrooms, Monkey's Bench, Ram's Head, Sheep's Head, Shelf fungus.
